Sweet rose milk drink with vermicelli

Falooda is a lavish, cold dessert drink that reached South Asia through Persian influence and is beloved in Pakistan and India.

In sweetened, rose-syrup-perfumed milk float falooda vermicelli, basil seeds and a scoop of ice cream - layered, it is a feast for the eyes.

Ingredients

  • Milk500 ml
  • Rose syrup (rooh afza)3 tbsp
  • Falooda vermicelli (wheat starch)50 g
  • Basil seeds (sabja)1 tbsp
  • Vanilla or kulfi ice cream2 scoops
  • Pistachiosto garnish

Preparation

  1. Soak the basil seeds in water until swollen.

  2. Cook the falooda vermicelli, chill.

  3. Stir rose syrup into the chilled milk.

  4. Layer vermicelli, basil seeds and rose milk in glasses.

  5. Crown with a scoop of ice cream and pistachios, serve at once.
