Gà Kho Gừng

Vietnamese caramelised ginger chicken

Gà kho gừng is a Vietnamese braise of chicken in a caramel fish sauce with plenty of ginger - a warming everyday dish.

The dark caramel gives colour and depth, the ginger a pleasant heat; braised until the chicken is tender and the sauce syrupy.

Ingredients

  • Chicken pieces (bone-in)700 g
  • Fresh ginger1 large piece
  • Sugar (for caramel)2 tbsp
  • Fish sauce3 tbsp
  • Shallots & garlicsome of each
  • Pepper & chillito taste
  • Spring onionto garnish

Preparation

  1. Melt the sugar to a dark caramel.

  2. Sear shallots, garlic and chicken in it.

  3. Pour in fish sauce and a little water.

  4. Add plenty of ginger strips and braise.

  5. Reduce until the sauce clings syrupy, garnish.
