Northern Thai pork curry with ginger

Gaeng hung lay is a mild, fragrant pork curry from Northern Thailand with clear Burmese influence - made entirely without coconut milk.

Plenty of ginger, tamarind and a special hung lay spice give the braised pork belly its warm, gently sweet character.

Ingredients

  • Pork belly700 g
  • Hung lay curry powder2 tbsp
  • Fresh ginger1 large piece
  • Tamarind paste2 tbsp
  • Garlic & shallotssome of each
  • Palm sugar & soy sauce1 tbsp each
  • Pickled garlicto serve

Preparation

  1. Marinate the pork belly with curry powder and garlic.

  2. Fry the shallots and garlic, add the meat.

  3. Pour in water, tamarind and palm sugar.

  4. Braise long until the meat is tender.

  5. Add shredded ginger, let steep briefly, serve.
