Thai sour and spicy curry

Gaeng som is a Southern Thai curry without coconut milk, taking its bright colour and intense sourness from tamarind and a chilli-turmeric paste.

With fish and crisp vegetables it is clear, spicy and refreshing at once - a cornerstone of Southern Thai cooking.

Ingredients

  • White fish fillet500 g
  • Tamarind paste3 tbsp
  • Gaeng som curry paste2 tbsp
  • Daikon, cauliflower, beans400 g
  • Fish sauce & palm sugar1 tbsp each
  • Water1 l

Preparation

  1. Dissolve the curry paste in water and bring to a boil.

  2. Season with tamarind, fish sauce and palm sugar.

  3. Add firm vegetables first, soft ones later.

  4. Poach the fish pieces at the end.

  5. Check the sour-spicy balance, serve with rice.
