Thai sour and spicy curry
Gaeng som is a Southern Thai curry without coconut milk, taking its bright colour and intense sourness from tamarind and a chilli-turmeric paste.
With fish and crisp vegetables it is clear, spicy and refreshing at once - a cornerstone of Southern Thai cooking.

- White fish fillet500 g
- Tamarind paste3 tbsp
- Gaeng som curry paste2 tbsp
- Daikon, cauliflower, beans400 g
- Fish sauce & palm sugar1 tbsp each
- Water1 l

Preparation
Dissolve the curry paste in water and bring to a boil.
Season with tamarind, fish sauce and palm sugar.
Add firm vegetables first, soft ones later.
Poach the fish pieces at the end.
Check the sour-spicy balance, serve with rice.
