Gai Lan in Oyster Sauce

Chinese broccoli, blanched and glazed

Gai lan (Chinese broccoli) in oyster sauce is a simple, elegant vegetable side that no Cantonese restaurant is without.

The greens are only briefly blanched to keep them crisp and bright green, then coated in a glossy oyster-soy sauce.

Ingredients

  • Gai lan (Chinese broccoli)400 g
  • Oyster sauce2 tbsp
  • Soy sauce & sugar1 tsp each
  • Garlic2 cloves
  • Vegetable oil & sesame oil1 tbsp each
  • Gingersome

Preparation

  1. Briefly blanch the gai lan in boiling salted water.

  2. Drain at once and arrange on a plate.

  3. Warm the oyster sauce, soy sauce and sugar.

  4. Briefly fry garlic and ginger in oil.

  5. Pour the sauce over the greens and serve.
