Gai tod Hat Yai is the famous fried chicken of the city of Hat Yai in Southern Thailand - crisp, savoury and irresistible.

The chicken is marinated in fish sauce, garlic and spices and served scattered with crisp-fried shallots.

  • Chicken pieces800 g
  • Fish sauce & oyster sauce2 tbsp each
  • Garlic & coriander rootsome of each
  • Rice flour4 tbsp
  • White pepper & turmeric1 tsp each
  • Shallots (for fried shallots)4
  • Vegetable oil (for frying)plenty

Preparation

  1. Marinate the chicken in fish sauce, garlic and spices.

  2. Coat in rice flour.

  3. Deep-fry golden and crisp in hot oil.

  4. Fry the shallots separately until crisp.

  5. Scatter the chicken with fried shallots, serve with sticky rice.
