Gai yang is the grilled chicken of the Isaan region in northeastern Thailand and a cornerstone of its street food, often served with sticky rice and papaya salad.
Marinated in coriander root, garlic, white pepper and fish sauce, the chicken is slowly grilled over charcoal – fragrant, juicy and lightly smoky.

Chicken (halved or pieces)★1 kg
Coriander root & garlic★some of each
White pepper★1 tsp
Fish sauce & soy sauce★2 tbsp each
Oyster sauce & palm sugar1 tbsp each
Coconut milk3 tbsp
Sticky rice & dipto serve

Preparation

Pound coriander root, garlic and pepper into a paste.

Mix with fish, soy, oyster sauce, palm sugar and coconut milk.

Marinate the chicken for several hours.

Grill slowly over charcoal, basting repeatedly.

Cook golden and through, serve with sticky rice and a dip.
