Indian carrot pudding with cardamom

Gajar ka halwa is a North Indian carrot pudding cooked down for hours in milk until dense, silky and deep red.

Enriched with ghee, cardamom and nuts, it is a winter and festive dessert served especially at Diwali.

Ingredients

  • Carrots (finely grated)800 g
  • Whole milk750 ml
  • Sugar120 g
  • Ghee3 tbsp
  • Cardamom4 pods
  • Almonds & pistachios1 handful

Preparation

  1. Sweat the grated carrots in ghee.

  2. Add the milk and reduce, stirring.

  3. When the milk has nearly evaporated, stir in the sugar.

  4. Season with cardamom and thicken further.

  5. Scatter with chopped nuts, serve warm or cold.
