Korean braised beef short ribs

Galbijjim is a festive Korean braise of beef short ribs, served at holidays like Chuseok and Seollal.

The ribs braise tender in a sweet-salty soy sauce with pear, dates and chestnuts until the meat falls off the bone.

Ingredients

  • Beef short ribs (galbi)1.2 kg
  • Soy sauce120 ml
  • Asian pear1
  • Garlic & gingersome of each
  • Carrot, radish, chestnuts400 g
  • Jujube (dates) & sesame oilsome
  • Sugar2 tbsp

Preparation

  1. Blanch and rinse the short ribs.

  2. Purée pear, garlic and ginger, mix with soy sauce and sugar.

  3. Set up the ribs in the marinade and braise slowly.

  4. Add vegetables, chestnuts and dates.

  5. Braise on until the meat is tender and the sauce glossy.
