Clear Korean beef short-rib soup

Galbitang is a festive Korean soup of beef short ribs, served on special occasions and holidays. A clear, pure broth is its hallmark.

The ribs are simmered long until the meat falls tender from the bones; glass noodles and egg ribbons make the soup at once rich and elegant.

Ingredients

  • Beef short ribs (cut short)1 kg
  • Korean radish (mu)300 g
  • Onion & garlicsome of each
  • Glass noodles (dangmyeon)100 g
  • Eggs (for garnish)2
  • Soy sauce & sesame oil1 tbsp each
  • Spring onion & saltto taste

Preparation

  1. Soak the ribs for 1 hour, then blanch and rinse.

  2. Simmer clear with radish, onion and garlic for 2 hours.

  3. Remove the radish, dice and return it.

  4. Season with soy sauce, sesame oil and salt.

  5. Cook glass noodles, serve with egg ribbons and spring onion.
