Gan Bian Si Ji Dou
Sichuan dry-fried green beans
Gan bian si ji dou - “dry-fried green beans” - is a Sichuan classic in which the beans are fried until their skin blisters and wrinkles.
Seasoned with ya cai (preserved mustard greens), garlic and a little chilli, they are crisp outside, tender within and intensely aromatic.

Ingredients
- Green beans400 g
- Ya cai (preserved mustard greens)3 tbsp
- Garlic & gingersome of each
- Dried chillito taste
- Soy sauce & Sichuan peppersome of each
- Vegetable oil3 tbsp

Preparation
Wash the beans, dry well and cut into pieces.
Fry hard in hot oil until the skin wrinkles, remove.
Fry ya cai, garlic, ginger and chilli.
Return the beans, season with soy sauce and Sichuan pepper.
Toss briefly and serve.
