Ginataang Bilo-Bilo

Filipino sweet coconut stew with rice balls

Ginataang bilo-bilo is a warm Filipino sweet stew of coconut milk in which little glutinous rice balls (bilo-bilo) float.

Sweet potato, plantain, sago and jackfruit join in; a comforting afternoon snack (merienda), especially on rainy days.

Ingredients

  • Glutinous rice flour (for bilo-bilo)200 g
  • Coconut milk800 ml
  • Sweet potato & plantain1 each
  • Sago pearls60 g
  • Jackfruit (in strips)1 handful
  • Sugar100 g

Preparation

  1. Knead glutinous rice flour with water and form little balls.

  2. Warm the coconut milk with sugar.

  3. Cook sweet potato and plantain soft in it.

  4. Add bilo-bilo and sago until they float and turn glassy.

  5. Stir in the jackfruit and serve warm.
