Vietnamese chicken and cabbage salad

Gỏi gà is a fresh Vietnamese salad of shredded chicken and crunchy cabbage, often made from the leftovers of a poached chicken.

A sweet-sour dressing of lime, fish sauce and sugar ties it together; plenty of Vietnamese coriander and roasted peanuts make it aromatic and crunchy.

Ingredients

  • Poached chicken, shredded300 g
  • Cabbage & carrot, shaved400 g
  • Lime juice & fish sauce3 tbsp each
  • Sugar2 tbsp
  • Garlic & chillisome of each
  • Vietnamese coriander (rau ram)1 bunch
  • Roasted peanuts & fried shallotsto sprinkle

Preparation

  1. Shave the cabbage and carrot, lightly salt and squeeze.

  2. Mix lime juice, fish sauce, sugar, garlic and chilli.

  3. Toss the chicken, cabbage and carrot with the dressing.

  4. Fold in the Vietnamese coriander.

  5. Serve sprinkled with peanuts and fried shallots.
