Gulai is a rich curry from Sumatra, closely related to Indian korma, which reached Indonesia along the trade routes.

Beef braises in a golden coconut sauce with turmeric, candlenuts and aromatics into a silky, spiced stew.

Ingredients

  • Beef (shank)700 g
  • Coconut milk500 ml
  • Shallots, garlic, candlenutsspice paste
  • Turmeric, coriander, cuminspices
  • Lemongrass & galangal1 each
  • Kaffir lime leaves & cinnamonsome
  • Chillito taste

Preparation

  1. Fry the spice paste with turmeric, coriander and cumin.

  2. Add lemongrass, galangal and lime leaves.

  3. Add the beef and sear briefly.

  4. Pour in coconut milk and simmer gently.

  5. Braise long until the meat is tender and the sauce silky.
