Guotie

Pan-fried Chinese potstickers

Guotie – “pot stick” – are the original potstickers of northern Chinese cuisine. Legend says they arose when a court cook accidentally fried forgotten jiaozi.

The dumplings are first seared, then steamed with water: this gives them a crisp base and a soft-cooked top.

Ingredients

  • Dumpling wrappers (jiaozi)30
  • Minced pork300 g
  • Napa cabbage, finely chopped200 g
  • Ginger & spring onionsome of each
  • Soy sauce & sesame oil1 tbsp each
  • Black rice vinegar (dip)to serve
  • Oil & water (for frying)as needed

Preparation

  1. Mix pork with cabbage, ginger, spring onion and seasoning into a filling.

  2. Fill the wrappers and pleat into half-moons.

  3. Sear in an oiled pan base-side down.

  4. Add water, cover and steam until it evaporates.

  5. Fry uncovered until the base is crisp, serve with vinegar.
