Guotie – “pot stick” – are the original potstickers of northern Chinese cuisine. Legend says they arose when a court cook accidentally fried forgotten jiaozi.
The dumplings are first seared, then steamed with water: this gives them a crisp base and a soft-cooked top.

Dumpling wrappers (jiaozi)★30
Minced pork★300 g
Napa cabbage, finely chopped★200 g
Ginger & spring onion★some of each
Soy sauce & sesame oil1 tbsp each
Black rice vinegar (dip)to serve
Oil & water (for frying)as needed

Preparation

Mix pork with cabbage, ginger, spring onion and seasoning into a filling.

Fill the wrappers and pleat into half-moons.

Sear in an oiled pan base-side down.

Add water, cover and steam until it evaporates.

Fry uncovered until the base is crisp, serve with vinegar.
