Gyeranmari

Korean rolled omelette

Gyeranmari is a rolled Korean omelette, a popular side dish (banchan) and a classic in every lunchbox.

Finely chopped vegetables and often seaweed are folded into the egg; rolled up it forms a pretty spiral that is sliced.

Ingredients

  • Eggs4
  • Carrot & spring onionsome of each
  • Dried seaweed (gim)1 sheet
  • Salt1 pinch
  • Vegetable oil1 tbsp

Preparation

  1. Whisk the eggs, stir in finely chopped carrot and spring onion, salt.

  2. Pour a thin layer of egg into the pan.

  3. As it sets, roll it up from one side.

  4. Re-oil the pan, pour a new layer and roll onto the roll.

  5. Repeat, then slice the roll.
