Gyeranmari
Korean rolled omelette
Gyeranmari is a rolled Korean omelette, a popular side dish (banchan) and a classic in every lunchbox.
Finely chopped vegetables and often seaweed are folded into the egg; rolled up it forms a pretty spiral that is sliced.

Ingredients
- Eggs4
- Carrot & spring onionsome of each
- Dried seaweed (gim)1 sheet
- Salt1 pinch
- Vegetable oil1 tbsp

Preparation
Whisk the eggs, stir in finely chopped carrot and spring onion, salt.
Pour a thin layer of egg into the pan.
As it sets, roll it up from one side.
Re-oil the pan, pour a new layer and roll onto the roll.
Repeat, then slice the roll.
