Haemul Pajeon

Crispy Korean pancake with seafood

Pajeon is a savoury pancake packed with spring onions; the haemul version comes with seafood. In Korea it is especially loved on rainy days.

Crisp outside, juicy inside, with a tangy soy-sauce dip of vinegar and sesame – a sociable dish to share.

Ingredients

  • Spring onions1 bunch
  • Seafood (squid, prawns)200 g
  • Flour150 g
  • Egg1
  • Soy sauce & rice vinegar (dip)1 tbsp each
  • Sesame oil1 tsp

Preparation

  1. Mix flour with water and egg into a thin batter.

  2. Lay the spring onions in the pan, pour the batter over.

  3. Scatter the seafood and fry crisp in plenty of oil.

  4. Flip and brown the other side.

  5. Cut into pieces, serve with the soy-vinegar dip.
