Halo-Halo

Filipino layered shaved-ice dessert

Halo-halo means “mix-mix” in Tagalog and is the Philippines' most loved summer dessert. It traces back to pre-war Japanese kakigori influences.

Over finely shaved ice, sweet beans, fruits, jellies and leche flan are layered – crowned with ube ice cream and crisp rice flakes.

Ingredients

  • Crushed ice2 bowls
  • Sweetened condensed milk100 ml
  • Sweet red beans & chickpeas2 tbsp each
  • Nata de coco & coconut gel2 tbsp each
  • Ube (purple yam) or ube ice cream2 scoops
  • Leche flan2 pieces
  • Toasted rice flakes (pinipig)2 tbsp

Preparation

  1. Layer sweet beans, jellies and nata de coco into tall glasses.

  2. Top generously with finely shaved ice.

  3. Pour over sweetened condensed milk.

  4. Set leche flan and a scoop of ube ice cream on top.

  5. Scatter with rice flakes and mix before eating.
