Japanese hamburg steak with demi-glace

Hambāgu is a star of Japan's yōshoku cuisine - Western-inspired dishes that have taken on a distinctly Japanese form since the Meiji era.

The juicy patty of beef and pork is made with sweated onions and panko, then served under a glossy demi-glace or tonkatsu sauce.

Ingredients

  • Minced beef & pork500 g
  • Onion1
  • Panko & milk50 g + 3 tbsp
  • Egg1
  • Red wine & Worcestershire2 tbsp each
  • Ketchup & soy sauce1 tbsp each
  • Butter1 tbsp

Preparation

  1. Finely dice the onion, sweat and let cool.

  2. Knead the mince with onion, panko-milk and egg thoroughly.

  3. Form oval patties, knock out the air, sear on both sides.

  4. Cook through covered, then remove.

  5. Reduce red wine, Worcestershire, ketchup and butter into a sauce.
