Japanese hamburg steak with demi-glace
Hambāgu is a star of Japan's yōshoku cuisine - Western-inspired dishes that have taken on a distinctly Japanese form since the Meiji era.
The juicy patty of beef and pork is made with sweated onions and panko, then served under a glossy demi-glace or tonkatsu sauce.

- Minced beef & pork500 g
- Onion1
- Panko & milk50 g + 3 tbsp
- Egg1
- Red wine & Worcestershire2 tbsp each
- Ketchup & soy sauce1 tbsp each
- Butter1 tbsp

Preparation
Finely dice the onion, sweat and let cool.
Knead the mince with onion, panko-milk and egg thoroughly.
Form oval patties, knock out the air, sear on both sides.
Cook through covered, then remove.
Reduce red wine, Worcestershire, ketchup and butter into a sauce.
