Hayashi Rice

Japanese sliced beef in demi-glace

Hayashi rice is a darling of Japanese yōshoku cuisine: tender sliced beef and onions in a velvety, tomato-brown sauce over rice.

Related to Japanese curry but milder and sweet-tart - a comfort dish rooted in families since the Meiji era.

Ingredients

  • Beef (thinly sliced)400 g
  • Onions2
  • Mushrooms200 g
  • Red wine & tomato paste100 ml + 2 tbsp
  • Demi-glace or brown sauce400 ml
  • Butter & flour2 tbsp each
  • Cooked riceto serve

Preparation

  1. Fry the onions in butter until golden.

  2. Add the beef and mushrooms and sear.

  3. Deglaze with red wine, stir in tomato paste.

  4. Pour in demi-glace and reduce silky, thicken with a flour-butter roux.

  5. Spoon over rice and serve.
