Hiyashi Chuka

Japanese cold ramen for summer

Hiyashi chuka – “chilled Chinese” – is a refreshing Japanese summer dish of cold ramen noodles with colourful toppings and a tangy sauce.

The noodles are ice-chilled and fanned out with egg, cucumber, ham or prawns; a sauce of soy sauce, vinegar and sesame oil ties it all together.

Ingredients

  • Ramen noodles2 portions
  • Eggs (for thin omelette)2
  • Prawns or ham150 g
  • Cucumber & tomato1/2 each
  • Soy sauce & rice vinegar3 tbsp each
  • Sugar & sesame oil1 tbsp each
  • Sesame & pickled gingerto garnish

Preparation

  1. Cook the ramen noodles, refresh in iced water and drain.

  2. Fry the egg into a thin omelette and cut into strips.

  3. Prepare cucumber, tomato and protein strips.

  4. Mix soy sauce, vinegar, sugar and sesame oil into a sauce.

  5. Plate the noodles, fan out the toppings, pour over the sauce.
