Hobak Juk
Korean pumpkin porridge
Hobak juk is a gentle Korean porridge of ripe pumpkin, mildly sweetened and thickened smooth with glutinous rice.
As an easily digestible dish it is often served to the recovering and the elderly; small glutinous rice balls (saealsim) add playful bite.

- Ripe pumpkin (kabocha)800 g
- Glutinous rice flour60 g
- Sugar or honey2 tbsp
- Salt1 pinch
- Glutinous rice balls (saealsim)1 handful
- Water800 ml

Preparation
Peel the pumpkin, cook soft and purée fine.
Warm the purée with water.
Mix glutinous rice flour with a little water and stir in until it thickens.
Season with sugar and a pinch of salt.
Simmer the rice balls in until they float; serve warm.
