Hobak Juk

Korean pumpkin porridge

Hobak juk is a gentle Korean porridge of ripe pumpkin, mildly sweetened and thickened smooth with glutinous rice.

As an easily digestible dish it is often served to the recovering and the elderly; small glutinous rice balls (saealsim) add playful bite.

Ingredients

  • Ripe pumpkin (kabocha)800 g
  • Glutinous rice flour60 g
  • Sugar or honey2 tbsp
  • Salt1 pinch
  • Glutinous rice balls (saealsim)1 handful
  • Water800 ml

Preparation

  1. Peel the pumpkin, cook soft and purée fine.

  2. Warm the purée with water.

  3. Mix glutinous rice flour with a little water and stir in until it thickens.

  4. Season with sugar and a pinch of salt.

  5. Simmer the rice balls in until they float; serve warm.
