Hong You Chao Shou

Sichuan wontons in chilli oil

Hong you chao shou are Sichuan wontons served not in soup but in a punchy red chilli-oil sauce - “chao shou” means “folded arms”, describing the fold.

The tender pork pouches bathe in a sauce of chilli oil, garlic, black vinegar and a touch of sugar - tingling, spicy and aromatic.

Ingredients

  • Wonton wrappers30
  • Minced pork250 g
  • Chilli oil3 tbsp
  • Black rice vinegar & soy sauce1 tbsp each
  • Garlic3 cloves
  • Sugar & Sichuan peppersome of each
  • Spring onionsome

Preparation

  1. Season the minced pork with ginger, soy sauce and a little water.

  2. Place a spoon of filling in each wrapper and fold over.

  3. Mix chilli oil, vinegar, soy sauce, garlic and sugar into a sauce.

  4. Cook the wontons in simmering water until they float.

  5. Drain, douse with the chilli-oil sauce, garnish.
