Hủ tiếu is the noodle soup of southern Vietnam and the Mekong Delta, rooted in Chinese-Teochew cooking - known for its especially clear, gently sweet pork broth.
Served with pork and prawns, and depending on the region as a soup or “dry” (broth on the side), with crisp herbs and bean sprouts.

Prawns★200 g
Dried squid (optional)2

Preparation

Simmer pork bones for hours into a clear broth, skimming.

Season mildly with fish sauce and rock sugar.

Poach the pork and prawns in it.

Blanch the rice noodles and place in bowls.

Pour over broth, garnish with sprouts and fried garlic.
