Inari Sushi

Sweet fried tofu pouches filled with rice

Inari sushi consists of sweet-savoury simmered fried tofu pouches (aburaage) filled with sushi rice. They are named after the rice deity Inari.

The pouches are braised in a dashi-soy sauce until juicy and sweet; filled with rice they are a beloved vegetarian bento classic.

Ingredients

  • Aburaage (fried tofu pouches)8
  • Sushi rice300 g
  • Dashi200 ml
  • Soy sauce & mirin2 tbsp each
  • Sugar2 tbsp
  • Rice vinegar2 tbsp
  • Sesamesome

Preparation

  1. Degrease the aburaage briefly with hot water.

  2. Braise soft in dashi, soy sauce, mirin and sugar.

  3. Cook the sushi rice and season with rice vinegar.

  4. Gently open the pouches and fill with rice.

  5. Sprinkle with sesame and serve.
