Jalebi

Crisp syrup spirals from South Asia

Jalebi are golden, spiral-shaped sweets, fried from a fermented batter and soaked at once in sugar syrup - crisp outside, juicy within.

Found across South Asia and the Middle East, they belong to festivals and street stalls; a touch of saffron and cardamom perfumes the syrup.

Ingredients

  • Flour150 g
  • Yoghurt2 tbsp
  • Sugar (for syrup)200 g
  • Saffron & cardamomsome of each
  • Lemon juice1 tsp
  • Vegetable oil (for frying)plenty

Preparation

  1. Mix flour, yoghurt and water into a batter, let ferment a few hours.

  2. Boil sugar with water, saffron and cardamom into a syrup.

  3. Fill the batter into a squeeze bottle.

  4. Pipe spirals into hot oil and fry crisp.

  5. Dip at once briefly into the warm syrup, drain, serve.
