Kare raisu – mild curry over rice

Japanese curry (kare raisu) reached Japan in the 19th century via the British navy and became one of the country's most loved everyday dishes.

Milder and thicker than Indian curries, it is bound with a curry-spiced roux; served with meat, potatoes and carrots over rice.

Ingredients

  • Beef (braising cut), cubed500 g
  • Onions2
  • Potatoes & carrots2 each
  • Curry powder & flour (roux)2 tbsp each
  • Butter2 tbsp
  • Stock700 ml
  • Cooked rice4 bowls

Preparation

  1. Fry the onions golden, add the beef and sear.

  2. Pour in stock, simmer potatoes and carrots tender.

  3. Mix butter, flour and curry powder into a roux.

  4. Stir in the roux and thicken the sauce.

  5. Serve over rice.
