Jeyuk Bokkeum

Korean-style spicy stir-fried pork

Jeyuk bokkeum is an everyday favourite of Korean cooking and a classic in diners and canteens. Thinly sliced pork fries in a gochujang marinade.

The sweet-spicy sauce caramelises on the meat; served with onion and spring onion, it is eaten with rice and lettuce leaves.

Ingredients

  • Pork belly or neck, thin500 g
  • Gochujang2 tbsp
  • Gochugaru (chilli flakes)1 tbsp
  • Soy sauce & sugar1 tbsp each
  • Garlic & gingersome of each
  • Onion & spring onion1 / 2
  • Sesame oil1 tbsp

Preparation

  1. Mix gochujang, gochugaru, soy sauce, sugar, garlic and ginger.

  2. Marinate the pork in it for 20 minutes.

  3. Sear hard in a hot pan.

  4. Add the onion and fry until the sauce glistens.

  5. Finish with sesame oil and spring onion, serve with rice.
