Andong Jjimdak

Korean braised chicken with glass noodles

Jjimdak comes from the city of Andong and is a braised chicken dish cooked in a sweet-salty soy sauce. It is traditionally shared in a large group.

Chicken, potatoes, carrots and glass noodles soak up the glossy sauce; dried chillies add a gentle heat, sugar and soy the signature balance.

Ingredients

  • Chicken pieces1 kg
  • Soy sauce100 ml
  • Glass noodles (dangmyeon)100 g
  • Potatoes & carrots2 each
  • Dried chillies & garlicsome of each
  • Sugar & sesame oil1 tbsp each
  • Onion & spring onion1 / some

Preparation

  1. Blanch the chicken briefly and rinse.

  2. Set on with soy sauce, sugar, garlic, chilli and water.

  3. Add potatoes, carrots and onion and cook through.

  4. Add soaked glass noodles and let them soak up the sauce.

  5. Finish with sesame oil and spring onion.
