Korean braised pig's trotters

Jokbal is braised pig's trotters, long-simmered in soy sauce, ginger and spices until the meat is tender and the skin glossy and gelatinous.

A favourite Korean anju (drinking dish), sliced and served with a salted-shrimp dip and ssam leaves for wrapping.

Ingredients

  • Pig's trotters1.5 kg
  • Soy sauce200 ml
  • Ginger & garlic1 knob/handful each
  • Spring onion & onion1 each
  • Rice wine & sugar100 ml + 3 tbsp
  • Cinnamon, bay, pepperspices
  • Lettuce leaves (ssam)to serve

Preparation

  1. Blanch the trotters briefly, discard the water.

  2. Set up with soy sauce, rice wine, aromatics and spices.

  3. Braise covered about 1.5 hours until tender, turning now and then.

  4. Let cool a little, then slice.

  5. Serve with ssam leaves and dip.
