Kakigōri

Japanese shaved ice with syrup

Kakigōri is Japan's elegant summer dessert of feather-fine shaved ice - a tradition reaching back to the Heian period.

The airy ice is doused with fruity syrup; modern versions crown it with sweetened condensed milk, fruit or matcha.

Ingredients

  • Ice block (finely shaved)plenty
  • Fruit syrup (e.g. strawberry, matcha)4 tbsp
  • Sweetened condensed milk2 tbsp
  • Fresh fruitto taste
  • Sweet red bean paste (optional)some

Preparation

  1. Shave the ice block very finely with a kakigōri machine.

  2. Heap the shaved ice airily in a bowl.

  3. Douse generously with fruit syrup.

  4. Garnish with condensed milk and fruit.

  5. Serve at once before the ice melts.
