Kakigōri
Japanese shaved ice with syrup
Kakigōri is Japan's elegant summer dessert of feather-fine shaved ice - a tradition reaching back to the Heian period.
The airy ice is doused with fruity syrup; modern versions crown it with sweetened condensed milk, fruit or matcha.

- Ice block (finely shaved)plenty
- Fruit syrup (e.g. strawberry, matcha)4 tbsp
- Sweetened condensed milk2 tbsp
- Fresh fruitto taste
- Sweet red bean paste (optional)some

Preparation
Shave the ice block very finely with a kakigōri machine.
Heap the shaved ice airily in a bowl.
Douse generously with fruit syrup.
Garnish with condensed milk and fruit.
Serve at once before the ice melts.
