Filipino beef stew in tomato-liver sauce

Kaldereta is a festive Filipino braise served at celebrations and fiestas. Its name goes back to the Spanish “caldereta” and the colonial era.

Beef braises in a rich tomato sauce thickened with liver spread; bell pepper, olives and cheese give the stew its special depth.

Ingredients

  • Beef (braising cut), cubed800 g
  • Tomato sauce & liver spread400 g / 3 tbsp
  • Bell pepper (red & green)2
  • Potatoes & carrots2 each
  • Garlic, onion, bay leafsome of each
  • Green olives & chilli1 handful
  • Grated cheese2 tbsp

Preparation

  1. Sear the beef all over, remove.

  2. Sweat garlic and onion, add the tomato sauce.

  3. Return the beef, cover with water, braise 90 minutes.

  4. Add potatoes, carrots and pepper and cook through.

  5. Finish with liver spread, olives and cheese into a thick sauce.
