Filipino oxtail stew in peanut sauce

Kare-kare is a festive stew of Filipino cuisine, often rooted in the Pampanga region. Its hallmark is the thick peanut sauce.

Oxtail is braised meltingly tender, thickened with peanut and rice flour and served with vegetables; salty shrimp paste (bagoong) is served alongside.

Ingredients

  • Oxtail1 kg
  • Peanut butter150 g
  • Toasted rice flour3 tbsp
  • Aubergine & green beans200 g each
  • Pak choi or water spinach1 bunch
  • Onion & garlicsome of each
  • Bagoong (shrimp paste)to serve

Preparation

  1. Boil the oxtail with onion until tender, keep the stock.

  2. Fry onion and garlic, stir in the peanut butter.

  3. Pour in the stock, thicken with rice flour.

  4. Add the meat, let the vegetables cook through in it.

  5. Serve with rice and bagoong.
