Japanese cutlet sandwich

Katsu sando is a Japanese sandwich that unites a crisp tonkatsu cutlet between soft white bread. It belongs to the yōshoku tradition of Western-inspired dishes.

The crustless, fluffy shokupan bread, a layer of sweet-savoury tonkatsu sauce and the juicy cutlet make it a beloved snack and travel bento.

Ingredients

  • Pork cutlets2
  • Panko, flour, eggfor breading
  • Soft white bread (shokupan)4 slices
  • Tonkatsu sauce3 tbsp
  • White cabbage, finely shredded1 handful
  • Butter & mustardsome
  • Frying oilas needed

Preparation

  1. Salt the cutlets, coat in flour, egg and panko.

  2. Fry in hot oil until golden and crisp.

  3. Spread the bread with butter and a little mustard.

  4. Coat the cutlet with tonkatsu sauce, top with cabbage.

  5. Place between the slices, press, trim crusts, halve.
