Kaya Toast

Singapore's breakfast toast with coconut jam

Kaya toast is the iconic breakfast of Singapore and Malaysia: crisp toast with kaya - a jam of coconut milk, egg and pandan - plus a slab of cold butter.

Traditionally served in kopitiam coffee shops with soft-boiled eggs in dark soy sauce and a strong coffee.

Ingredients

  • Toast bread4 slices
  • Kaya (coconut-pandan jam)4 tbsp
  • Cold butter2 tbsp
  • Eggs (soft-boiled)2
  • Dark soy sauce & white pepperto serve

Preparation

  1. Toast the bread until crisp.

  2. Spread one side generously with kaya.

  3. Lay a thin slice of cold butter on top.

  4. Top with the second slice and halve.

  5. Serve with soft-boiled eggs and soy sauce.
