Braised pork leg on rice

Khao kha moo is a Thai-Chinese street classic: pork leg braised soft in soy sauce, cinnamon and star anise, served on steaming rice.

A soft-boiled egg, pickled greens and a fiery chilli-garlic sauce complete the hearty dish.

Ingredients

  • Pork leg1.2 kg
  • Soy sauce (light & dark)3 tbsp each
  • Cinnamon, star anise, five-spicespices
  • Palm sugar & garlicsome of each
  • Eggs4
  • Cooked riceto serve
  • Chilli & rice vinegar (for sauce)some

Preparation

  1. Toast the garlic and spices.

  2. Set up the pork leg with soy sauce, palm sugar and water.

  3. Braise covered about 2 hours until tender, steeping eggs along.

  4. Pound chilli, garlic and rice vinegar into a fiery sauce.

  5. Plate the pork and egg on rice, serve with sauce.
