Braised pork leg on rice
Khao kha moo is a Thai-Chinese street classic: pork leg braised soft in soy sauce, cinnamon and star anise, served on steaming rice.
A soft-boiled egg, pickled greens and a fiery chilli-garlic sauce complete the hearty dish.

- Soy sauce (light & dark)3 tbsp each
- Cinnamon, star anise, five-spicespices
- Palm sugar & garlicsome of each

Preparation
Toast the garlic and spices.
Set up the pork leg with soy sauce, palm sugar and water.
Braise covered about 2 hours until tender, steeping eggs along.
Pound chilli, garlic and rice vinegar into a fiery sauce.
Plate the pork and egg on rice, serve with sauce.
