Khao Man Gai

Thai rice with poached chicken

Khao man gai is the Thai version of Hainanese chicken rice, brought by Chinese immigrants and turned into a street classic.

Tenderly poached chicken rests on rice cooked in the chicken broth with garlic and ginger - alongside a spicy soybean-chilli sauce.

Ingredients

  • Chicken portions (thigh/breast)600 g
  • Jasmine rice300 g
  • Ginger & garlicsome of each
  • Fermented soybean paste (taucheo)2 tbsp
  • Chilli & limefor the sauce
  • Cucumber & corianderto serve

Preparation

  1. Gently poach the chicken in water with ginger, keep the broth.

  2. Fry the garlic, sweat the rice in it.

  3. Cook the rice in the chicken broth.

  4. Stir soybean paste, chilli, lime and a little broth into a sauce.

  5. Slice the chicken, plate on rice, serve with sauce.
