Khao Mok Gai

Thai turmeric rice with chicken (Thai biryani)

Khao mok gai is the Thai version of biryani and comes from the Muslim community of southern Thailand. Rice and chicken cook together in one pot.

Turmeric colours the fragrant rice golden; a green dipping sauce with coriander and chilli adds freshness and heat – a festive, simple rice dish.

Ingredients

  • Chicken pieces800 g
  • Basmati or jasmine rice400 g
  • Turmeric & curry powder1 tsp each
  • Cumin, coriander, cardamomspices
  • Onion, garlic, gingersome of each
  • Chicken stock600 ml
  • Coriander & chilli (dip)to serve

Preparation

  1. Marinate the chicken with turmeric, curry powder and spices.

  2. Fry onion, garlic and ginger, add the chicken.

  3. Add washed rice and stock to the same pot.

  4. Cook covered until rice and chicken are tender.

  5. Serve with a green coriander-chilli dip and fried shallots.
