Khao Piak Sen

Lao chicken noodle soup with fresh rice noodles

Khao piak sen is a warming Lao noodle soup often eaten for breakfast. Its hallmark is the freshly made, soft rice-tapioca noodles.

The thick, slightly chewy noodles cook right in the chicken broth and make the soup silky; fresh herbs, lime and chilli add brightness.

Ingredients

  • Rice flour & tapioca starch200 g / 100 g
  • Chicken800 g
  • Ginger, garlic, shallotssome of each
  • Fish sauce2 tbsp
  • Spring onion & coriander1 bunch
  • Fried shallots3 tbsp
  • Lime & chillito serve

Preparation

  1. Knead rice flour and starch with hot water into a dough.

  2. Roll the dough thin and cut into noodles.

  3. Simmer the chicken with aromatics into broth, shred the meat.

  4. Cook the fresh noodles right in the broth until soft.

  5. Serve with chicken, herbs, shallots, lime and chilli.
