Indian rice pudding with cardamom and nuts

Kheer is one of South Asia's oldest sweets, prepared for centuries at festivals and in temples. Rice simmers patiently in sweetened milk.

Cardamom, saffron and toasted nuts refine the creamy rice; warm or chilled, it is a beloved finish to any feast.

Ingredients

  • Short-grain rice100 g
  • Whole milk1 l
  • Sugar100 g
  • Cardamom4 pods
  • Saffron1 pinch
  • Almonds & pistachios2 tbsp
  • Raisins1 tbsp

Preparation

  1. Rinse and soak the rice.

  2. Bring the milk to a boil with cardamom, add the rice.

  3. Simmer over low heat, stirring, until creamy.

  4. Stir in sugar, saffron, nuts and raisins.

  5. Serve warm or chilled.
