Khuushuur

Mongolian fried meat pastries

Khuushuur are flat fried dough pockets filled with spiced meat - one of Mongolia's most loved dishes, especially at the Naadam summer festival.

The thin dough encloses juicy minced beef or mutton with onion; fried crisp in hot oil, they are golden outside and juicy within.

Ingredients

  • Flour300 g
  • Minced beef or mutton400 g
  • Onion1
  • Garlic2 cloves
  • Salt & pepperto taste
  • Vegetable oil (for frying)plenty

Preparation

  1. Knead flour with water and salt into a firm dough, let rest.

  2. Mix the mince with finely chopped onion, garlic and seasoning.

  3. Roll the dough thin, cut out circles.

  4. Add filling, seal into half-moons and press flat.

  5. Fry golden on both sides in hot oil.
