Klepon are small green glutinous rice balls from Indonesia, filled with palm sugar and rolled in grated coconut. They belong to the classic kuih sweets.
Biting in, the melted gula melaka runs out – a sweet surprise; pandan colours the dough green and gives it its signature aroma.

Glutinous rice flour★200 g
Pandan extract★1 tsp
Gula melaka (palm sugar), chopped★100 g
Grated coconut★100 g
Pinch of salt1 pinch
Warm wateras needed

Preparation

Knead glutinous rice flour with pandan and warm water into a dough.

Steam the grated coconut with a pinch of salt briefly.

Portion the dough, enclose palm sugar, roll into balls.

Cook in simmering water until they float.

Drain and roll in the grated coconut.
