Lamprais

Sri Lankan Burgher banana-leaf rice parcel

Lamprais traces back to Sri Lanka's Dutch Burghers; the name derives from the Dutch “lomprijst” (lump of rice).

Rice, a mixed curry, meatballs (frikkadels), blachan and sambol are packed together in a banana leaf and baked - everything melds into one aroma.

Ingredients

  • Rice (cooked in stock)400 g
  • Mixed meat curry (chicken/beef)400 g
  • Meatballs (frikkadels)8
  • Seeni sambol & blachansome of each
  • Curry leaves & spicessome
  • Banana leaves4

Preparation

  1. Cook the rice in spiced stock.

  2. Prepare the mixed meat curry and meatballs.

  3. Portion rice, curry, meatballs, sambol and blachan.

  4. Pack everything into a banana leaf and seal.

  5. Warm the parcels in the oven until the aromas meld.
