Larb

Lao spicy minced-meat salad

Larb (laap) is considered the national dish of Laos and symbolises good fortune. It is a warm salad of minced meat, herbs and toasted rice powder.

The toasted glutinous rice powder (khao khua) gives the salad its nutty note and body; lime, fish sauce and chilli create the signature hot-sour balance.

Ingredients

  • Minced pork400 g
  • Glutinous rice (for khao khua)2 tbsp
  • Lime juice3 tbsp
  • Fish sauce2 tbsp
  • Shallots & spring onionsome of each
  • Mint & coriander1 bunch
  • Chilli flakesto taste

Preparation

  1. Toast the glutinous rice without oil and grind into coarse powder.

  2. Cook the minced meat crumbly in a little water.

  3. Season with lime juice, fish sauce and chilli.

  4. Fold in shallots, spring onion and rice powder.

  5. Finish with mint and coriander, serve lukewarm.
