Laziji

Chongqing chicken in a mountain of chilli

Laziji is a notorious dish from Chongqing: crisp-fried chicken cubes hidden under a mountain of dried chillies and Sichuan pepper.

You literally hunt the chicken pieces out from among the chillies - the interplay of heat and tingling Sichuan pepper (má-là) is legendary.

Ingredients

  • Chicken thighs (cubed)500 g
  • Dried chillies40 g
  • Sichuan pepper1 tbsp
  • Garlic & gingersome of each
  • Soy sauce & rice wine1 tbsp each
  • Starch (for frying)3 tbsp
  • Sesame & spring onionto garnish

Preparation

  1. Marinate the chicken in soy sauce and rice wine, coat in starch.

  2. Deep-fry crisp in hot oil, remove.

  3. Bloom the dried chillies and Sichuan pepper briefly.

  4. Add garlic and ginger, return the chicken.

  5. Toss vigorously, serve with sesame and spring onion.
