Leche Flan

Filipino caramel egg custard

Leche flan is the rich Filipino caramel custard and shows the Spanish influence in island cuisine. It belongs to feasts and holidays.

Unlike European flan it uses only egg yolks and condensed milk, which makes it especially dense and creamy; steamed rather than baked.

Ingredients

  • Egg yolks8
  • Sweetened condensed milk1 can (390 g)
  • Evaporated milk150 ml
  • Sugar (for caramel)150 g
  • Vanilla1 tsp
  • Lemon or lime zestsome

Preparation

  1. Melt the sugar in the mould into a golden caramel.

  2. Mix egg yolks with condensed and evaporated milk.

  3. Flavour with vanilla and zest, strain.

  4. Pour the custard over the caramel in the mould.

  5. Steam covered for 40 minutes, chill and unmould.
