Liangpi

Cold wheat noodles from Shaanxi

Liangpi - “cold skin” - are steamed, slippery noodles of wheat or rice starch, a summer speciality of Xi'an in Shaanxi province.

They are dressed cold with a punchy sauce of chilli oil, vinegar and garlic and served with chunks of wheat gluten (mianjin).

Ingredients

  • Wheat starch (or ready liangpi)300 g
  • Chilli oil3 tbsp
  • Black rice vinegar3 tbsp
  • Garlic3 cloves
  • Cucumber1
  • Bean sprouts1 handful
  • Soy sauce & sesame paste1 tbsp each

Preparation

  1. Steam the starch batter thinly in a tray into sheets.

  2. Let cool and cut into wide strips.

  3. Julienne the cucumber, blanch the bean sprouts briefly.

  4. Whisk chilli oil, vinegar, garlic, soy sauce and sesame paste.

  5. Toss the noodles with vegetables and sauce, serve cold.
