Cambodian stir-fried short rice noodles
Lort cha is a beloved Cambodian street dish of short, thick rice noodles seared hard in the wok.
Served with beef, crisp vegetables and a fried egg, often with a sweet-spicy chilli sauce - a favourite evening meal.

- Short thick rice noodles (lort)400 g
- Beef (thinly sliced)250 g
- Broccoli or Chinese cabbage200 g
- Soy sauce & oyster sauce1 tbsp each
- Garlic2 cloves
- Eggs (for fried eggs)2
- Chilli sauce (sriracha)to serve

Preparation
Sear garlic and beef in a hot wok.
Add the vegetables and stir-fry briefly.
Add the rice noodles, season with soy and oyster sauce.
Toss hard until the noodles take on a charred aroma.
Serve with a fried egg and chilli sauce.
