Cambodian stir-fried short rice noodles

Lort cha is a beloved Cambodian street dish of short, thick rice noodles seared hard in the wok.

Served with beef, crisp vegetables and a fried egg, often with a sweet-spicy chilli sauce - a favourite evening meal.

Ingredients

  • Short thick rice noodles (lort)400 g
  • Beef (thinly sliced)250 g
  • Broccoli or Chinese cabbage200 g
  • Soy sauce & oyster sauce1 tbsp each
  • Garlic2 cloves
  • Eggs (for fried eggs)2
  • Chilli sauce (sriracha)to serve

Preparation

  1. Sear garlic and beef in a hot wok.

  2. Add the vegetables and stir-fry briefly.

  3. Add the rice noodles, season with soy and oyster sauce.

  4. Toss hard until the noodles take on a charred aroma.

  5. Serve with a fried egg and chilli sauce.
