Lumpiang Sariwa

Fresh Filipino spring rolls with peanut sauce

Lumpiang sariwa are unfried, fresh spring rolls - the soft sister of crisp lumpia, filled with a vegetable-and-mince filling.

They are doused in a sweetish garlic-peanut sauce and scattered with chopped peanuts - a festive classic.

Ingredients

  • Spring-roll crepes (lumpia wrappers)8
  • Heart of palm (ubod) or jicama300 g
  • Carrot, green beans, cabbage300 g
  • Soy sauce & garlicsome of each
  • Peanuts & brown sugar (for the sauce)some of each
  • Lettuce leaves8

Preparation

  1. Finely cut the vegetables and stir-fry crisp, let cool.

  2. For the sauce, thicken water, soy sauce, sugar and garlic.

  3. Lay a lettuce leaf and vegetable filling on the crepe.

  4. Roll loosely (one end open).

  5. Douse with peanut sauce and scatter with peanuts.
