Buddha's Delight – Chinese vegetable stew

Luohan zhai – “Buddha's delight” – is a traditional vegetarian dish prepared in China's Buddhist monasteries and often served at New Year.

A medley of vegetables, mushrooms, tofu and glass noodles is braised in a glossy soy sauce – fully plant-based, varied and festive.

Ingredients

  • Shiitake & wood-ear mushroomssome of each
  • Firm tofu & tofu skin200 g
  • Glass noodles80 g
  • Carrot, napa cabbage, bamboo1 handful each
  • Soy sauce & oyster sauce (vegetarian)2 tbsp each
  • Ginger & garlicsome of each
  • Sesame oil1 tbsp

Preparation

  1. Soak the mushrooms, cube and sear the tofu.

  2. Fry ginger and garlic in the wok.

  3. Add vegetables and mushrooms and stir-fry briefly.

  4. Braise with soy sauce, vegetarian oyster sauce and a little water.

  5. Add soaked glass noodles, finish with sesame oil.
