Luohan Zhai
Buddha's Delight – Chinese vegetable stew
Luohan zhai – “Buddha's delight” – is a traditional vegetarian dish prepared in China's Buddhist monasteries and often served at New Year.
A medley of vegetables, mushrooms, tofu and glass noodles is braised in a glossy soy sauce – fully plant-based, varied and festive.

- Shiitake & wood-ear mushroomssome of each
- Firm tofu & tofu skin200 g
- Glass noodles80 g
- Carrot, napa cabbage, bamboo1 handful each
- Soy sauce & oyster sauce (vegetarian)2 tbsp each
- Ginger & garlicsome of each
- Sesame oil1 tbsp

Preparation
Soak the mushrooms, cube and sear the tofu.
Fry ginger and garlic in the wok.
Add vegetables and mushrooms and stir-fry briefly.
Braise with soy sauce, vegetarian oyster sauce and a little water.
Add soaked glass noodles, finish with sesame oil.
